Chewy Oatmeal Chocolate Chip Bars Recipe

The oat mixture provides protein and fibre, and the chocolate chips add decadence to these soft and chewy cookie bars!  

– 1 ⅓ Cups all-purpose flour – 1 Cup old-fashioned rolled oat – ¾ Cup unsalted Butter  – ½ cup confectioner’s sugar – 2 large egg – ¾ cup light brown sugar – 2 teaspoons pure vanilla extract – ¼ teaspoon salt – ½ teaspoon baking powder – ½ cup chocolate chip – ½ cup semi-sweet or dark chocolate  – 1 teaspoon sea salt flakes for serving

Line a 9-inch brownie pan with parchment. Mix flour, oatmeal, baking powder and salt in a large bowl or stand mixer bowl.

Beat butter, sugars, vanilla, and eggs in a separate bowl with a handheld mixer on low speed. Mix wet and dry ingredients.

Add chocolate chips and chunks. One type of chocolate works, but I prefer both for melted chocolate.

Pour the batter into the pan and spread it evenly. Decoration: press more chocolate chips on top. Bake cookie bars 25-30 minutes.

After allowing the bars to cool in the pan for fifteen minutes, take them out and let them cool completely on a wire rack. Serve after cutting into squares.
