Cheesy Chicken Casserole

This simple Cheesy Chicken Casserole combines pasta, tender chicken, a rich tomato sauce, and mozzarella cheese, baked to perfection. Comforting, delicious, and easy to make dinner!

– 1 pound pasta  – 2 tablespoon olive oil – 1 pound chicken breast – salt and pepper  – 2 tablespoon butter – 1 large onion – 5 cloves garlic  – 1 teaspoon oregano – 1 teaspoon basil – ½ teaspoon red pepper flake – 1 cup chicken broth – 28 ounce diced tomatoes  – 2 cups Mozzarella cheese

Cook pasta in boiling salted water as directed on the package. Preheat oven to 375°F.

In a large skillet, heat olive oil on medium. Salt and pepper the chicken. Cook chicken for 5 minutes until no longer pink.

Add butter to skillet and melt. Cook onions for 3–5 minutes until softened and translucent.

Sauté garlic until fragrant, 30 seconds more. Adjust salt and pepper, then add oregano, basil, and red pepper flakes.

Add chicken broth and boil, scraping up the brown bits. Add crushed tomatoes and simmer 5 minutes.

Place cooked pasta in a 9x13-inch casserole dish, add chicken tomato sauce and a cup of mozzarella cheese, and mix well.

The remaining mozzarella cheese should be sprinkled over the top of the casserole.

Tender chicken breast chunks, ravioli, a can of chopped tomatoes, and a generous amount of mozzarella cheese.
