Cheddar Broccoli Pasta Salad

Fresh and Easy Cheddar Broccoli Pasta Salad with crisp vegetables, fresh cheddar, and homemade mayonnaise. 

– 8 oz pasta  – 5-6 bacon slice – ½ cup green peas  – 1 cup broccoli florets  – 1 cup tri-color bell pepper – ½ small red onion  – ½ cup Cheddar Mix or Colby Jack Cheese – 6 cherry or plum tomatoes  – ¾ cup mayonnaise – ½ teaspoon lemon juice – 1 teaspoon apple cider or white wine vinegar – 2 tablespoon sour cream or Greek yoghurt – 2 tablespoon parmesan  – Salt and pepper to taste

Follow package instructions to cook pasta. Prepare vegetables and blanch broccoli. Fill a medium saucepan/pot with water to cover broccoli.

Add salt and boil. Put the veggies in the water and lower the heat. After 3 minutes on medium heat, remove the vegetables with tongs and place them in ice-cold water.

Drain and towel-dry after cooling. Set aside. Mix mayonnaise, vinegar, lemon juice, sour cream, parmesan, salt, and pepper in a bowl.

Put cooked, drained pasta in a large bowl. Mix the dressing, veggies, and cheddar.

Before placing the bowl in the refrigerator to chill for at least two hours, cover it with plastic wrap and place it there.

Be sure to add crumbled bacon just before serving, then stir it up and serve it right away! Have fun!
