This savoury caramelised onion tart has juicy caramelised sweet onions, crumbled feta, sweet fig jam, and flaky puff pastry.
– 1 puff pastry sheet– 1 ½ tablespoons of cold butter– 4 medium red onion– 4 tablespoons of fig jam– 3-4 tablespoons of feta– 1 egg wash– 5 tablespoons of brown sugar– 2 teaspoon apple cider vinegar

Preheat oven to 400°F. Cook onion in olive oil over medium heat in a large skillet until softened. Add sugar and vinegar.

Keep the sugar at a low simmer until it is melted, bubbly, syrupy, and a deeper golden brown colour.

Roll out the puff pastry sheet on a flat surface and place on a parchment-lined baking sheet or tart pan.

A sharp knife should score the crust about 1 inch from the puff pastry rectangle's edges, and a fork should poke the inside several times.

Use most of the fig jam to fill the puff pastry and save some. Top cooked red onion with feta and cubed butter.

Once the edges are folded in, brush with egg wash. Cook for 20 to 25 minutes, or until well-browned.

Apply the leftover fig jam on top. Slice, serve, and let cool for a few minutes.
