Caramel Peanut Blondies Recipe

People love these quick and easy Caramel Peanut Blondies because they are crunchy and gooey. 


– 2 cups (240g) all-purpose flour – 3/4 teaspoon baking powder – 1/2 teaspoon salt – 1 cup (226g) unsalted butter, melted and slightly cooled – 2 cups (400g) firmly packed light brown sugar – 2 large egg – 1 teaspoon vanilla extract – 1 cup (190g) caramel bit – 1 cup (125g) chopped unsalted roasted peanuts* – 1 to 2 pinches coarse salt (optional)

Preheat oven to 350°F. Prepare a 9"x 13"x 2" baking pan. Mix flour, baking powder, and salt. Set aside.

Beat butter and brown sugar with a medium-speed electric mixer until combined. Add eggs and vanilla, mix well. 

Step 2

Lower mixer speed. Add flour mixture slowly, mixing just until combined. Mix in peanuts and caramel bits. 

Step 3

Place batter in pan and spread evenly. Sprinkle a pinch or two of coarse salt over the batter. 

Step 4

Bake until edges are browned and centre is set, 35–40 minutes. A pick inserted into the centre should reveal moist crumbs. Cut bars after the pan cools completely.
