– 10 tablespoons (141g) unsalted butter – 1 cup (200g) firmly packed brown sugar – 2 large eggs, lightly beaten – 1 & 1/2 teaspoons vanilla extract – 2 cups (240g) all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon salt – 1 cup (170g) semisweet chocolate chip – 1/2 cup (60g) chopped nut – coarse salt, optional – ice cream, for serving – caramel sauce or chocolate sauce, for serving

Put butter in a 10-inch cast-iron skillet. Butter should melt and foam over medium heat.

Step 1

Cook, stirring occasionally, until brown specks form at the bottom of the pan and the butter smells nutty.

Step 2

Remove pan from heat. Add brown sugar and mix well. Allow to cool slightly. Preheat oven to 350°F. Stir eggs and vanilla into the cooled butter mixture.

Step 3

Add flour, baking powder, and salt and mix briefly. To avoid a mess, add flour in portions and stir gently.

Step 4

Mix in chocolate chips and nuts. Evenly distribute batter in pan. Sprinkle a pinch or two of coarse salt on top if desired.

Step 5

Bake 25–30 minutes until the blondie is golden brown and a pick inserted into the centre comes out clean. Do not overbake.

Step 6

Consider serving warm with ice cream and caramel or chocolate sauce.
