Breaded Chicken Zucchini Patties With Rice

If you like chicken burgers and croquettes, try these homemade crispy breaded chicken patties! Lean ground chicken, zucchini, carrot, spices, rice, and breadcrumbs make these crispy patties juicy and flavorful. 

– 1 ½ pound ground chicken mince  – ¼ cup diced onion – ½ cup medium grated carrot – 2 cups large grated zucchini – ¾ cup breadcrumbs  – 1 cup cooked rice  – 1 teaspoon ground sweet paprika – ½ teaspoon garlic powder – black pepper to taste – 2 tablespoon cooking oil – kosher salt to taste – ½ teaspoon dried Italian herb – ½ teaspoon red chili flake

Wash and peel courgette. Medium-grate it into a bowl and squeeze out excess moisture with a thin kitchen towel or cheesecloth.

I sauté the onions and carrots before mixing everything, but if you're in a hurry, you can mix them raw.

Mix ground chicken, cooked rice, zucchini, carrots, onions, Italian herbs, red chilli flakes, garlic powder, paprika, salt, and black pepper in a large bowl.

Hand-form medium-sized balls from the mixture. I prefer to make thicker patties with 1 ½ tablespoons of mixture.

Before putting the chicken patties in the pan, dip them in breadcrumbs on a smaller plate/bowl.

Press the chicken croquettes gently to flatten in a medium skillet of olive oil.

Let one side cook for 3-4 minutes, then flip and cook for 4 more. To remove moisture, place on a paper towel-lined plate.

Use your favourite sauces, dippings, and garnishes. We like fries, mashed potatoes, grains, and leafy salad.
