Baked Pesto Chicken on a sheet pan can be made in under 30 minutes! Chicken breast baked with cremini mushrooms and fresh basil pesto is delicious over rice or other grains!
– 1 pound skinless chicken breast– ½ cup basil pesto– salt and black pepper to taste– 8 cremini mushrooms – Parmesan and fresh basil for garnish

Rub pesto and salt and pepper on each chicken piece. Pesto-marinate chicken for at least an hour.

Place on a foil- or parchment-lined baking sheet. Bake at 350 F for 30 minutes in a preheated oven.

Continue baking for another ten minutes after adding the mushrooms that have been tossed in pesto.

A 165 F kitchen thermometer inserted into the thickest part of the chicken indicates readiness.

After baking, I like to top chicken breasts with fresh pesto. Simply refreshing the look with a thin layer is fine.

Serving creamy pesto chicken with rice, cauliflower rice, zucchini noodles, more greens or roasted cherry tomatoes and other favourite side dishes or grains.
