Asian Style Udon Noodles with Pork and Mushroom

Asian Style Udon Noodles with Pork and Mushrooms—a quick and easy dish with pork, mushrooms, and sriracha sauce. Ready in 20 minutes max!  

– 8 ounce udon noodles  – 1 tablespoon olive oil – 1 medium shallot  – 4 cloves garlic – 1 pound pork chops  – 1 cup mushroom – 5 green onions  – 2 tablespoons sesame seed – ¼ cup peanut

Blanch udon noodles for 1–2 minutes in boiling water or cook according to package instructions.

Rapidly drain and rinse with cold water. Set aside. Mix the sauce ingredients in a small bowl.

Put the olive oil in a large skillet or wok and bring it up to a high temperature.

When the wok is hot, add the shallot, garlic, mushrooms, and pork, and continue to cook until the pork begins to brown and become crispy.

After adding the noodles and sauce, give it a good stir and continue cooking for another two minutes.

Take off the heat and add the peanuts, green onions, and sesame seeds as garnish. While hot, serve.
