Arugula Walnut Pesto Pasta

This colourful Arugula Walnut Pesto Pasta will brighten your table. Perfect for weeknight dinners, this healthy and refreshing pesto takes under 5 minutes. 

4 cups arugula ⅔ cup olive oil 3 cloves garlic ½ cup walnuts ¾ cup Parmesan cheese ¼ teaspoon salt ¼ teaspoon pepper



Drain the pasta after cooking it as directed on the package. Save up to a cup of the pasta water.

Blend the rocket, olive oil, garlic, walnuts, Parmesan, salt and pepper until the mixture is completely smooth. Add the rocket to the blender.

In order to achieve the desired consistency, add some pasta water to the pesto if it is too thick.

Parmesan cheese should be sprinkled on top of the pasta after it has been combined with pesto. As soon as possible, serve.
