Almond Flour Chocolate Chip Cookie Bars are grain-free and refined sugar-free but taste like chocolate chip cookies. Delicious chewy cookie bars!
INGREDIENT
– ½ cup (113g) unsalted butter 1 stick, softened– ⅓ cup (80ml) pure maple syrup*– 1 large egg– 1 tsp vanilla extract– 1 ⅔ cups (160g) finely ground almond flour– ½ tsp baking soda– 1/2 tsp sea salt– 1 cup (180g) chocolate chips**
Line an 8" x 8" square baking dish with parchment paper and preheat the oven to 350°F.Mix butter, pure maple syrup, and vanilla extract in a stand mixer with the paddle attachment.

Or, use a large bowl and hand mixer. Mix egg and scrape bowl sides. The stand mixer needs almond flour, baking soda, and sea salt. Mix to thick dough.
Step 2
Beat chocolate chips into dough on medium speed until evenly distributed. Evenly distribute cookie dough on the pan.
Step 3
Bake the cookie bars on the centre rack of the preheated oven for 18–22 minutes until done and slightly golden brown around the edges. I bake 20 minutes.
Step 4
Cookie bars are chewier at 18 minutes, crispier at 22.Serve sliced cookie bars after 15 minutes of cooling.
