Almond Butter Oatmeal Chocolate Chip Cookie Bars Recipe

Delicious, adaptable Almond Butter Oatmeal Chocolate Chip Cookie Bars! Use them as a healthy snack when you crave.


– 1 cup unsweetened almond butter – 2 egg – ⅓ cup pure maple syrup – 1 ½ cups oat – 1/2 tsp ground cinnamon optional – 1/2 tsp sea salt – 2/3 cup chocolate chips optional

Heat to 350°F. Parchment an 8" x 8" square pan. Mix almond butter, pure maple syrup, and eggs in a large bowl until creamy.

Note: microwave almond butter for 20–30 seconds (by itself) or until it is soft enough to stir with other ingredients. 

Step 2

Mix the remaining dry ingredients—oats, ground cinnamon, salt, and chocolate chips—with the wet ingredients until a thick, sticky dough forms. 

Step 3

In the baking dish, evenly distribute the cookie dough. Extra chocolate chips can be sprinkled on cookie bars. Flaky sea salt is great! 

Step 4

Bake the bars on the centre rack of the preheated oven for 25–30 minutes until the edges are slightly golden brown and set. Let the bars cool for 30 minutes before slicing and serving.
