Easy Berry Cake Recipe

Ingredients:

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 2 large eggs, at room temperature
  • ½ cup maple syrup
  • ¼ cup full-fall Greek yogurt
  • ½ teaspoon vanilla extract
  • 2 cups fresh or frozen berries, a combo of blueberries, blackberries and raspberries, divided
  • Powdered sugar, for dusting, optional

 

Instructions:

  • Spray a springform pan measuring 9 inches with cooking spray and preheat the oven to 350 degrees Fahrenheit.

  • The use of non-fat Greek yogurt is not something I would advocate because it does not contribute as much moisture to the cake, and it may contain additives that could alter the consistency of the cake.
